Lo studente arriverà a conoscere il problema dello spreco alimentare in modo approfondito, a partire dalle cause, gli impatti e le diverse possibili strategie di soluzione, in ambito pubblico e privato. Il concetto di sistema alimentare, le caratteristiche dei soggetti che vi interagiscono, le attività, le modalità di coordinamento degli attori sono conoscenze che verranno riprese durante il corso e che supportano l’analisi del problema degli sprechi alimentari nel sistema agro-alimentare.ss
The student will get to know the problem of food waste in depth, starting from the causes, impacts and different possible solution strategies, in the public and private sectors. The concept of food system, the characteristics of the subjects who interact with it, the activities, the methods of coordination of the actors are knowledge that will be taken up during the course and that support the analysis of the problem of food waste in the agri-food system.
La valutazione prevede lo sviluppo e la presentazione di un elaborato individuale, incentrato su un caso specifico, che verrà esposto oralmente.ss
The evaluation involves the development and presentation of an individual paper, focused on a specific case, which will be presented orally.
Lo studente dovrà essere in grado di comprendere le cause del problema dello spreco alimentare ai diversi livelli del sistema agro-alimentare (dal contesto locale a quello globale) e analizzare gli impatti e le implicazioni nonché le diverse possibili strategie di prevenzione e valorizzazione.
The student must be able to understand the causes of the problem of food waste at different levels of the agri-food system (from the local to the global context) and analyze the impacts and implications as well as the different possible prevention and enhancement strategies
Durante il corso verranno svolte delle discussioni su temi specifici, attraverso documenti di policy e articoli di quotidiani o riviste. Attraverso la discussione lo studente dovrà essere in grado di evidenziare le possibili implicazioni secondo la metodologia da loro appresa.
During the course discussions will be carried out on specific topics, through policy documents and articles of daily or revised journals. Through the discussion the student must be able to highlight the possible implications according to the methodology they have learned.
Lo studente sarà sollecitato durante l'attività in classe a partecipare alla discussione, lavorare in gruppo, redigere brevi elaborati funzionali alla valutazione finale.
The student will be urged during the class activity to participate in the discussion, work in groups, write short papers functional to the final evaluation.
La verifica della partecipazione in aula viene effettuata dal docente attraverso una propria valutazione.
The verification of participation in the classroom is carried out by the teacher through his own evaluation.
Definizione di sistema agro-alimentare, degli attori, delle risorse, delle relazioni con cui interagiscono, con riferimento al livello locale e globale. Il ruolo delle politiche alimentari ai diversi livelli.
Disamina delle cause economiche, strutturali e comportamentali dello spreco alimentare.
Gli impatti dello spreco: implicazioni economiche, ambientali, sociali ed etiche
Molteplicità di approcci e iniziative per la gestione del problema dello spreco agro-alimentare. Strategie del settore privato, pubblico e ruolo del terzo settore. Problemi aperti.
Durante il corso gli studenti verranno sollecitati dall’incontro con attori del sistema agro-alimentare (ambito agricolo, grande distribuzione, banchi alimentari etc…) a riflettere sulle tematiche affrontate durante il corso.

The impacts of waste: economic, environmental, social and ethical implications
Multiplicity of approaches and initiatives for the management of the problem of agri-food waste. Strategies of the private and public sector and the role of the third sector. Open issues.
During the course students will be encouraged by the meeting with actors of the agri-food system (agriculture, large-scale distribution, food banks etc ...) to reflect on the issues addressed during the course.
