Learning outcomes
This course will give students the ability to know what essential oils and flavors are and how to obtain them from raw plant material. Information will also be provided on the analysis techniques for the determination of their chemical composition and, in particular cases, for the recognition of adulterations. Finally, the main applications in the health, industrial and food sectors will be discussed.
