Learning outcomes

The course set as target of giving to the students a general knowledge of the structures and properties of the alimentary principles, as well as of the methods for their determination in the foods. In the special section, the students come deal with some inorganic and organic foods of great consumption, facing with methods for their analyses and law requirements. In addition, the main categories of dietary products meeting the nutritional needs of both healthy individuals in different stages of life (weaning, elderly, etc.) and of special physiological situations (pregnancy, lactation, menopause, etc.), as well as functional foods, probiotics and prebiotics, and supplements for the sports are considered.
