Learning outcomes

The course aims to provide the student with the principles that define the quality of animal products. In particular, the aspects relating to the chemical composition of the main animal derived foods (milk, cheese, meat, eggs) will be examined in depth. In this way, the bases for the study of the qualitative improvement of animal products, which the student can develop in subsequent courses or in the professional activity, are posed.
