Modulo di “Legislazione Alimentare”
Il modulo di “Legislazione Alimentare” è finalizzato all’acquisizione dei principi giuridici e delle disposizioni normative riguardanti la tutela del consumatore di alimenti. Gli obiettivi formativi afferiscono all’area professionale del tecnico igienista, esperto di gestione della qualità e della sicurezza alimentare.
In particolare, attraverso le lezioni teoriche, i confronti guidati dal docente, lo studente acquisirà le conoscenze sui seguenti temi:
Modulo di “Tecniche di allevamento e qualità delle produzione delle piccole specie”
Il modulo di “Tecniche di allevamento e qualità delle produzioni delle piccole specie” è finalizzato all’acquisizione delle principali tecniche di allevamento degli animali in produzione zootecnica, non già affrontate in corsi precedenti; contestualmente, il corso mira a sviluppare gli aspetti legati al miglioramento della sostenibilità delle produzioni zootecniche (produzioni estensive e alternative) e all’analisi della qualità dei prodotti.
In tal senso, per le piccole specie terrestri da reddito lo studente acquisirà le conoscenze di base sulla tecnica di allevamento del pollo, del coniglio da carne e della gallina ovaiola con sistemi alternativi, sulle caratteristiche qualitative dei prodotti (carne e uova) così ottenuti e sulla specifica normativa relativa la protezione degli animali in allevamento, con risalto degli aspetti etologici attraverso approfondimenti etologici nelle diverse specie
Per le specie acquicole ampio spazio verrà dato alle produzioni da acquacoltura (mtilicoltura, ostricoltura, acquaponica), che tra tutte le produzioni zootecniche risultano essere quelle caratterizzate da un miglior “carbon footprint”. Gli obiettivi formativi afferiscono quindi all’area professionale agro-zootecnica, per la formazione di tecnici consapevoli delle problematiche legate alla sostenibilità delle produzioni zootecniche nonché degli strumenti disponibili.

The "Food Law" module is aimed to the acquisition of the legal principles and normative provisions regarding the protection of the consumer of food. The training objectives belong to the professional area of hygienist technician, expert in quality management and food safety.
In particular, through theoretical lessons, teacher-led comparisons, the student will acquire knowledge on the following topics:
Module of "Breeding Techniques and Quality of Small Animal Species Productions"The Module of "Breeding Techniques and Quality of Small Species Production" is aimed to the acquisition of the main livestock breeding techniques, not already discussed in previous courses. At the same time, the course aims to develop the aspects related to improving the sustainability of livestock production (extensive and alternative productions) and product quality analysis.In this sense, for the small livestock species, the student will acquire the basic knowledge about the breeding technique of chicken, rabbit meat and laying hen with alternative systems, on the qualitative characteristics of the products (meat and eggs) thus obtained and on the specific legislation on the protection of animals in breeding, with emphasis on ethological aspects through ethological studies in the various species.For aquatic species, a large space will be carried out on aquaculture productions (mussel farming, oysters, aquaponics), whose among all the livestock productions are characterized by a better carbon footprint. The training objectives therefore concern to professional livestock sector, regarding to the training of technicians aware of the issues related to the sustainability of animal husbandry and the available tools.

Il modulo di “Legislazione Alimentare” presuppone il possesso da parte dello studente di competenze nell’ambito dell’igiene e tecnologie alimentari e delle industrie di produzione di alimenti di origine animale.

Il modulo di “Tecniche di allevamento e qualità delle produzione delle piccole specie” presuppone il possesso da parte dello studente di competenze nell’ambito delle zoocolture, della nutrizione animale e della tecnica mangimistica, nonché del benessere animale.

Le attività didattiche del modulo di “Legislazione Alimentare” consistono in:
lezioni frontali, per un totale di 3CFU/30 h, svolte con l’ausilio della proiezione di diapositive in cui sono riportati i contenuti descritti, corredate anche da confronti guidati dal docente su tematiche operative.
Il materiale didattico, consistente nelle diapositive illustrate a lezione, il testo delle norme illustrate durante le lezioni, viene fornito dal docente agli studenti nei giorni precedenti lo svolgimento delle lezioni.
Il docente si mette a disposizione degli studenti per colloqui individuali, sia negli orari prestabiliti, che in altri orari concordati su richiesta dello studente tramite mail (carlo.dascenzi@unipi.it).
Il modulo di “Legislazione Alimentare” si avvale di verifiche in itinere dell'efficacia didattica, basate sulla valutazione di:
Le due prove in itinere, una a metà ed una alla fine del corso, consistono in un questionario con domande a risposta multipla chiusa su tutti gli obbiettivi didattici affrontati a lezione.
Gli studenti possono chiedere che la valutazione delle competenze acquisite si possa avvalere anche di un colloquio integrativo. Il risultato delle prove viene espresso in trentesimi ed incide per l’80% sulla valutazione complessiva.
Il livello di partecipazione, valutato in occasione dei confronti interattivi e dei lavori di gruppo, espresso in trentesimi, incide per un 20% sulla valutazione complessiva. Gli indicatori sono presenza e contributo personale.
I risultati delle verifiche in itinere, sespressi in trentesimi, sono comunicati agli studenti mediante posta elettronica. In caso di risultato non insufficiente, lo studente ha la facoltà di chiedere che sia considerato nella valutazione complessiva al momento dell'esame del corso integrato.

Modulo di “Tecniche di allevamento e qualità delle produzione delle piccole specie”
Le attività didattiche del modulo di “Tecniche di allevamento e qualità delle produzione delle piccole specie” sono svolte in due corsi diversi, distinti sulla base delle piccole specie da reddito prese in considerazione: specie terrestri e specie acquicole.
La attività didattiche del corso sulle specie avi-cunicole consistono in:
lezioni frontali, per un totale di 20 ore, e lezioni fuori sede per un totale di 8 ore. Le lezioni frontali sono svolte con l’ausilio della proiezione di diapositive in cui sono riportati i contenuti illustrati verbalmente. Le lezioni fuori sede sono svolte in allevamenti di conigli, polli da carne e galline ovaiole che adottano il sistema alternativo e visita dell’allevamento di razze autoctone da uova dell’Ateneo.
Il materiale didattico, consistente nelle diapositive illustrate a lezione viene fornito dal docente agli studenti durante lo svolgimento delle lezioni.
Il docente si mette a disposizione degli studenti per colloqui individuali, sia negli orari prestabiliti, che in altri orari concordati su richiesta dello studente tramite mail (margherita.marzoni@unipi.it).

La attività didattiche del corso sulle specie acquicole consistono in:
lezioni frontali, per un totale di 20 h e esercitazioni di laboratorio per un totale di 6 ore; le lezioni frontali verranno svolte con l’ausilio della proiezione di diapositive in cui sono riportati i contenuti descritti, corredate anche da confronti guidati dal docente su tematiche operative. Le esercitazioni di laboratorio verranno svolte utilizzando materiale biologico (uova, embrioni e larve di Zebrafish, come modello animale) e attraverso un sopralluogo presso un impianto acquaponico di ateneo.
Il materiale didattico, consistente nelle diapositive illustrate a lezione viene fornito dal docente agli studenti nei giorni precedenti o contestualmente allo svolgimento delle lezioni.

The didactic activities of the "Food Law" module consist of:
Frontal lessons, for a total of 3CFU / 30 h, carried out with the help of slides projection where the contents described are featured, accompanied by teacher-led comparisons on operational themes.
The teaching material, consisting of the slides shown during the lesson, the text of the rules illustrated during the lessons, is provided by the teacher to the students on the days preceding the lessons.
The teacher is available to the students for individual meetings, both at pre-arranged schedules and at other agreed schedules at the student's request via email (carlo.dascenzi@unipi.it).
The "Food Law" module uses verifiable educational effectiveness tests based on the evaluation of:
The two on-course trials, one in the middle and one at the end of the course, consist of a questionnaire with multiple-choice questions closed on all the didactic objectives faced in the lessons.
Students may ask that the assessment of acquired skills may also be used for an additional interview. The test results are expressed in 1/30 and affects 80% on the overall evaluation.
The level of participation, valued at interactive comparisons and group works, expressed in 1/30, affects 20% of the overall rating. Indicators are personal presence and contribution.
The results of the on-course verifications, expressed in 1/30, are communicated to students via e-mail. In case of not insufficient result, the student is entitled to request that he be considered in the overall evaluation when examining the integrated course.
The teacher makes himself available to students who require the teaching material in English.
Module of "Breeding Techniques and Quality of Small Animal Species Productions"
The didactic activities of the module "Breeding techniques and quality of small animal species productions" are carried out in two different courses, distinguished on the basis of small income species considered: terrestrial species and aquatic species.
The didactic activities of the course on avi-cunicola species consist of:
Frontal lessons, for a total of 20 hours, and off-site lessons for a total of 8 hours. Frontal lessons are carried out with the aid of slides projection where verbally illustrated contents are reported. Out-of-home lessons are held in rabbit farms, chicken poultry and laying hens that adopt the alternative system and visit the breeding of native rabbits from the University's eggs.
The didactic material, consisting of the slides shown in the lesson, is provided by the teacher to the students during the lessons.
The teacher is available to the students for individual interviews, both at predetermined times and at other times agreed upon by the student via mail (margherita.marzoni@unipi.it).

Traineeships are not included in the didactic objectives of the integrated course, however, teachers receive students to arrange internship programs at contracted companies, both curricular and non-curricular, on topics covered in the module program.
