Learning outcomes
Conoscenze

Il corso si propone nella parte generale di fornire allo studente le conoscenze per  la selezione e la'analisi critica di documentazione di ricerca e ufficiale sulla materia prima vegetale e i suoi nutra-ingredienti usati attualmente nella filiera  alimentare e nutrizionale, secondo le moderne linee guida nazionali e internazionali.

La parte speciale del corso fornirà nozioni su specifici nutra-ingredienti vegetali  attualmente usati  nella filiera alimentare e nutrizionale. Training su piattaforme informatiche  per la ricerca sito-bibliografica sia di articoli scientifici che di documentazione ufficiale e aziendale condivisa a livello internazionale (schede tecniche di prodotto, monografie, documenti di istituzioni nazionali e internazionali operanti nel settore dei botanicals, novel food e altre tipologie di prodotti finiti attualmente usati nel mercato alimentare-nutrizionale.)

Knowledgement

The course aims in the general part to provide the student with the knowledge for the selection and critical analysis of research and official documentation on the plant nutra-ingredients currently used in the food and nutritional chain, according to modern national and international guidelines.

Training on researching of validated scientific data at national and international levels (product data sheets, monographs, documents of national and international institutions operating in the field of botanicals, novel food and other types of finished products currently used in the food and plant nutra-ingredients’ market.

 


Knowledge

The course will provide the student with the knowledge for researching, selecting and managing industrial and marketable vegetable raw material and derivatives in the specific supply chain of medicinal plants according to international guidelines.

The special part of this course will provide knowledge on plant-based raw materials currently used in the food supplement and nutrition chain.

Modalità di verifica delle conoscenze

  discussioni in aula guidate su specie vegetali come materie I e nutra-ingredienti derivati: valutazione di dati selezionati in documentazione ufficiale (monografie, documenti EMA, EFSA, WHO, AFNOR, ISO nazionali e internazionali) e di ricerca

  sessioni di esercitazioni pratiche di selezione delle fonti sito-bibliografiche e del dato come da programma finalizzate all'attivita' di simulazione nel report d'esame ( tutorial activity)

  prova finale: redazione di un documento relativo al nutra-ingrediente vegetale attribuito dal docente; simulazione di redazione di documentazione (document drafting) mediante selezione di articoli scientifici e documentazione ufficiale (monografie, documenti EMA, EFSA, WHO, AFNOR, ISO nazionali e internazionali)

 

Assessment criteria of knowledge

 

1) practical activity by using selected websites and reserch journals will be carried out by tutorial sessions for the preparation of the final student's exam report

2) editing activity of a written technical sheet on a selected plant matrix  or semi-derivative by a bibliographical research both on scientific references and official documentation ( monograph, EMA, EFSA, WHO, ISO documetation) carried out by the student directly

Capacità

Lo studente acquisirà la capacità di ricercare e  studiare dati relativi alla selezione e la gestione della materia prima vegetale e derivati nella filiera delle piante officinali secondo moderne linee guida internazionali.

Lo studente acquisirà il linguaggio tecnico necessario alla gestione della materia prima vegetale grezza o semi-processata per la sua gestione e trasformazione nello sviluppo di ingredienti e integratori alimentari utili in protocolli nutrizionali.

Lo studente acquisira' capacita' critiche nell'interpretazione del dato bibliografico inerente gli argomenti del corso

Skills

The student will acquire a research methodology to select and use scientific and official data related to plant matrices and their derivatives in the supply chain of medicinal and aromatic plants according to modern and industrial international guidelines.

The student will acquire the international technical language requested for the management of raw or semi-processed plant raw material in the transformation chain and in the development of food ingredients and supplements useful in the actual world market.

The student will be able to provide an elaborated report by the selected scientific and official reference material

Indicazioni metodologiche

L’attività didattica sarà svolta anche attraverso esercitazioni teorico-pratiche per l’utilizzazione di banche dati specifiche per la selezione della materia prima di origine vegetale al fine di indirizzare lo studente nella selezione dl materiale bibliografico e nella metodologia di preparazione del report d'esame.

 

Teaching methods

The teaching activity will also be carried out through theoretical exercises as well as the use of specific databases for the selection of plant raw materials in order to guide the student in the selection of bibliographic material and in the methodology for preparing the examination report.

Metodologia di ricerca, selezione e analisi critica di dati in documentazione di ricerca,  istituzionale e di settore aziendale su materia I vegetale e i relativi nutra-ingredienti presenti nel mercato attuale

La materia I vegetale e la sua composizione in metaboliti primari e metaboliti secondari utile nello sviluppo di nutra-ingredienti.

Definizioni ufficiali e caratteristiche tecniche richieste attualmente nelle diverse  tipologie di materie I e semiderivati di origine vegetale (olii essenziali, polveri grezze, estratti, e sostanze pure) utili nello sviluppo di nutra-ingredienti

Selezione ed uso del nome botanico validato come parola chiave per la ricerca in banche dati selezionate di dati su nutra-ingredienti vegetali

Botanica economica ed etnobotanica per la selezione di materie I vegetali nella ricerca e sviluppo di nutra-ingredienti vegetali presenti nel mercato attuale

Research methodology for selection and critical analysis in research papers, institutional assessments and industry enterprise documentation on plant raw material and its nutra-ingredients in the current market. Eating the "natural" plant nutra-ingredients: selection of primary metabolites versus secondary metabolites in the research and development of actually plant nutra-ingredients. Validated botanical name and botanical reference databases as keywords for data searching on nutra-plant ingredients. Economic botany, ethnobotanic and popular international traditions between legislation, product development and actual markets in the research and development of plant nutra-ingredients.
